About Manos Juntas...

Manos Juntas Micromill are focused on two things: Ethical coffee purchasing practices and quality driven processing techniques. This is reflected directly by farmers getting paid a fixed price per kilo of coffee cherries delivered to the mill, before any cherries are processed, and always at a rate higher than the market average.

When cherries arrive at the mill, their Brix content and pH are measured. Producer labelled tanks are then filled with their cherries for a five day long anaerobic fermentation where Brix and pH are measured constantly, and nitrogen is injected to stimulate yeast. At the desired Brix and pH levels, fermentation is stopped and any yeast present is removed through a reduction in temperature to 20 degrees centigrade. Cherries are then aged in tanks for five days before solar drying for 35-40 days and de-pulping ready for export.

Manos Juntas, an exceptional coffee year on year - we noticed a significant boost in quality in this year’s samples (and just couldn’t resist!). Each sip opens with an intense winey and slightly boozy acidity – with a dominant juicy watermelon sours note enveloping your tastebuds. Tart red winter berries pave the way to a long sweet toffee-like finish. Every cup nostalgic, taking us back to that first time we tasted this gem.

Filter – Hario Switch – 15g coffee, 230g 90 degree water.
Close valve, fill in concentric circles to 120g. At 1 min 20, pour in concentric
circles & open value until 230g.
Filter Suggested Grind settings: Commandante ~24 clicks,
Fellow Ode 2 ~7. Approx. ~700 microns.
