About Cajamarca Tabi...

A beautiful cup - light, floral, airy and juicy. Perfumed citrus notes balance out a sweet, black ceylon tea-like character and a melted toffee-like mouth feel.

A regionally grown varietal of the Arabica coffee species called Tabi - no, not the cat, it’s a coffee! From the Cajamarca region in Peru, it’s a leaf-rust resistant variety born from a cross between Typica, Bourbon the Timor hybrid. It’s hand-pulped, fermented in tanks and partially or fully dried at the farm before transport to a central warehouse. Upon delivery of the processed coffee parchment to the exporter, farmers are informed on their coffee’s quality analysis, its cup score, and are offered an immediate price.

Farmers can now access previously unavailable drying facilities to allow for close moisture control in the final drying stage of this coffee’s processing. This helps drive quality, and get farmers a better price for their coffee.Through ongoing support, this coffee’s quality will continue to rise year on year.

Espresso - 1:3, Coffee : water brew ratio, 26-28s extraction
time.

Filter – Hario Switch – 13g coffee, 180g 96 degree water.
Close valve, fill in concentric circles to 80g. At 1 min 20, pour in concentric
circles & open value until 180g. Dilute to taste (recommended 30-40g
dilution).

Filter Suggested Grind settings: Commandante ~25 clicks,
Fellow Ode 2 ~7-2. Approx. ~750
microns.
