Manos Juntas is a micromill focused on two things:
Ethical coffee purchasing practices and quality driven coffee processing.

Manos Juntas purchase whole coffee cherries by total weight. By only working with local farms, farmers are saved a trip of many kilometres to deliver their cherries. The riper a cherry is, the heavier it is. This encourages farmers to only harvest the ripest cherries. After Manos Juntas receive cherries from the farms they work with, they pay a fixed price for them, well above their current market value. When first received, all cherries are placed into hermetic tanks for a five day long anaerobic fermentation. The tanks are injected with nitrogen to stimulate the yeast. PH and Brix readings indicate the end of the fermentation. The coffee is the 'barrel aged' for five days, and dried for a following 35-40 before de-pulping.

If no selection is made, whole bean is the default.
