Mexican Mountain Water Decaf

Mountain water processing is known for producing clean crisp coffee, that fairly represents how that bean might have tasted before the caffeine was removed. This coffee was decaffeinated at Descamex, the main mountain water decaffeination facility in Mexico.

Smallholder producers deliver this coffee to the San Cristobal de las Casas and Yajalon buying stations in Northern Chiapas. The growing area runs between 900 and 1100 masl, where the majority of cherries planted are varieties that produce distinct, large, smooth-bodied beans.

Pico De Orizaba is the highest mountain in Mexico, covered in rich volcanic soils and mineral rich rivers and streams. The Jamapa River is the largest of these, and together they supply all the water needed for this decaffeination method. Buying stations receive the coffee in parchment, quality check it, then transport it to a high tech dry mill in Veracruz, after a second quality check the coffee is then cleaned, milled and sorted to be prepared for export.

Some flavour pairings are unforgettable—like the punchy depth of dark chocolate and the bright burst of juicy white grape acidity in this coffee. It flows like honey dripping fresh from the comb; with a sweetness to match."

Espresso: 18g dose of coffee to make 40g of espresso in 26-30s. This makes a double shot.

Filter: We like to use French Press for this coffee:

  • Place 15g of Medium-Course coffee grounds into the French Press and place it on some scales.
  • Start a timer and quickly pour 230g of 90 degree water onto the coffee grounds.
  • Using a spoon, gently incorporate any dry spots of coffee that remain into the water.
  • Place the lid on top, but don’t press down the plunger.
  • After 4 minutes, press the plunger down until it just touches the coffee and very slowly pour the coffee into your cup.

The best recipe for any coffee depends on the equipment, water and preparation being used to make it. We encourage you to experiment and fine tune our suggestions to your preferences.

We have chosen Mountain Water Processing as our preferred decaf method as with it being a chemical free process this ensures all the natural essence of the bean isn’t lost unlike a traditional decaf method which in turn gives you a cup bursting with standout flavours. Our Mexican Decaf comes from smallholder producers who deliver to the San Cristobal de las Casas and Yajalon buying stations in Northern Chiapas. The growing area which runs between the altitudes of 900 and 1100 meters above sea level is characterised by large beans sizes with a smooth body. All our Mexican Decaf Coffee uses pure water from Pico De Orizaba- the highest mountain in Mexico. All the coffee is received in parchment which is quality controlled then transported to a high tech dry mill in Veracruz, after a second quality check the coffee is then cleaned, milled and sorted to be prepared for export.

    OK, so decaf is never going to be true coffee, but these make a nice slightly bitter with a sweet undertone coffee.no chemical taste which is good.for an everyday decaf they work really well.especially with a little vanilla or cinnamon added.
